Sometimes it is just an idea that gives a standard dish an extra touch, so a rice salad can turn into a colourful lunch to deal with the summer heat: here is a perfect summer recipe, my Venere rice salad in a glass.

The rule I am following these days with no air conditioning in my kitchen is just one: no oven, unless I have to bake bread. So, here is a one-course meal ready in 30 minutes, unless the cooking time for your rice takes longer.

Summer recipe: Venere rice salad in a glass

Ingredients for the courgettes cream

  • 300g courgettes
  • 170g water or vegetable stock*
  • 100g leek
  • 20g extra virgin olive oil
  • a bunch of basil
  • some mint leaves
  • salt and pepper

Ingredients for the mozzarella mousse

  • 400g cow’s milk mozzarella
  • 20g extra virgin olive oil
  • water

Ingredients for assembling 4 glasses

  • 200g cherry tomatoes
  • 100g Venere rice
  • basil leaves
  • extra virgin olive oil
  • salt and pepper

Preparation

  1. Cook the Venere rice in lightly salted water and drain it when it has the perfect texture to be eaten, then lay it out to cool quite quickly.
  2. In the meantime, chop the leek and sweat it in a pan with the extra virgin olive oil, add the chopped courgettes, allow them to gain flavour for a minute, then add the water, basil and mint and cook for 12-13 minutes.
  3. Pour everything in a blender, blend to a smooth cream and season with salt and pepper. Put aside.
  4. Place the chopped mozzarella in a large, tall glass, add 4-5 tablespoons of water and start blending with an immersion blender (ideal for the texture is to use a Bamix) while also pouring in the extra virgin olive oil in a trickle. If the mozzarella cream is too hard, add a few more tablespoons of water while continuing to blend until it is soft and creamy like a mousse. Season with salt and pepper.
  5. Cut the cherry tomatoes into 4 wedges, season with salt and pepper and a drizzle of extra virgin olive oil.
  6. Now assemble the glasses: pour the courgette cream on the bottom, form a layer of Venere rice, a layer of mozzarella mousse, the chopped cherry tomatoes and finally decorate with a few basil leaves.

Aperitif is more and more an Italian ritual, a way to enjoy some food with a good drink with family and friends. So, even early in the week, we may be thinking about the Friday night aperitif and, this time, we have decided it will be homemade.
So we share with you a recipe for an appetising salsa to enjoy with crispy nachos: Guacamole Salsa. You can also accompany it with Teff crackers.

Guacamole Salsa

1.86g carbohydrates per 100g

Ingredients

  • 200g avocado (the pulp of 1 avocado)
  • 30g lime or lemon juice
  • 10g onion or spring onion
  • 3g salt
  • 2g coriander or parsley
  • 1-2 g finely chopped garlic
  • pepper, chilli and chopped tomato to taste

Preparation of Guacamole Salsa

  1. Place the avocado pulp in a blender, add the lime or lemon juice and blend well. Then add all the other ingredients chopped very finely.
  2. Season with salt, pepper and chilli and, if you want, add a chopped tomato.
    Serve the guacamole salsa with nachos or use it to stuff tortillas together with tasty Chilli con carne.

Soy and pumpkin patties

Ingredients

  • 300g pumpkin cooked in the oven
  • 150g boiled yellow soy
  • 50g breadcrumbs**
  • 30g leek
  • parsley, extra virgin olive oil, salt, pepper and nutmeg

Preparation

  1. Slice the leek thinly and put it in a pan with a little oil, brown it and add soy and pumpkin.
  2. Season with herbs and spices, add salt and blend in a food processor until creamy.
  3. Form into patties (we had about 14) and roll them in breadcrumbs. Brown in a non-stick frying pan with a little oil, then serve with fresh vegetables.

Ingredients

  • 150g gluten-free bread flour mix, brand Schär Mix B**
  • 150g water
  • 100g wholemeal rice flour*
  • 50g corn flour*
  • 50g teff flour*
  • 30g extra virgin olive oil
  • 7g fine salt
  • 3g brewer’s yeast

Preparation

  1. Mix together all the ingredients, except the oil, to form a smooth, even dough.

2. Roll it out into very thin layers and cut into long, rather wide rectangles as desired; then place them on a baking tin covered with a sheet of baking paper, prick the surface with a fork and brush it with oil.

  1. If you wish, you can sprinkle the surface with sesame seeds or other seeds and herbs.
    Bake in a static oven preheated to 200°C for 10-15 minutes until crispy.

Preparation

So many ingredients, and so many types of Bruschetta, but only one simple and quick method of preparation.
That’s right, because once all the toppings have been prepared, all you have to do is lightly toast the buckwheat bread slices, assemble the different Bruschettas and put them in the oven for a few minutes so that they warm up and acquire even more flavour. Obviously, where cheese is present, it is advisable to wait for it to melt on contact with the heat before serving.
