Are you short of time, but fancy something tasty and versatile? Mini buckwheat breadsticks will be a delightful surprise. Watch how to prepare them on my YouTube channel!

Very few ingredients, quick and easy to prepare, you can use them as an aperitif or to make the bread basket even richer, perhaps by combining them with some Buckwheat and corn focaccia.

The base is a brisè crust whose flavour is enriched by blended sesame seeds that allow us to reduce the amount of salt contained, but let’s not forget that these are buckwheat mini breadsticks that contain butter, so let’s not eat too many… as they are irresistible!

Finally, sesame seeds are rich in calcium, as well as containing Omega 3 and Omega 6, so they are good supplements for lactose intolerant people and to prevent osteoporosis.

Mini buckwheat breadsticks   

carbohydrates 49.7g per 100g

Ingredients

  • 130 g gluten free bread flour mix, brand Nutrifree**
  • 60g buckwheat flour*
  • 80g butter
  • 40g water
  • 1 egg white
  • 20g sesame seeds
  • 1 pinch of salt

Preparation of Mini buckwheat breadsticks

  1. Put the sesame seeds in a blender and blend to a flour.
  2. In a bowl, mix all the ingredients: the sesame flour, bread flour and buckwheat flour, a pinch of salt, the cold butter in small pieces, the egg white and the water and stir to obtain an even mixture.
  3. Form a ball with the dough, wrap it in cling film and place it in the refrigerator for 1 hour.
  4. Take pieces of dough and form them into cylinders 1cm in diameter, cut them into pieces 3-4cm long and lay them on a baking tin lined with parchment paper.
  5. Bake the breadsticks in a static oven preheated to 180°C for about 20 minutes.

Version with gluten of Mini buckwheat breadsticks

Replace the gluten free flour with 150 g bread flour and reduce the amount of water if the dough is too soft.

Aperitif is more and more an Italian ritual, a way to enjoy some food with a good drink with family and friends. So, even early in the week, we may be thinking about the Friday night aperitif and, this time, we have decided it will be homemade.
So we share with you a recipe for an appetising salsa to enjoy with crispy nachos: Guacamole Salsa. You can also accompany it with Teff crackers.

Guacamole Salsa

1.86g carbohydrates per 100g

Ingredients

  • 200g avocado (the pulp of 1 avocado)
  • 30g lime or lemon juice
  • 10g onion or spring onion
  • 3g salt
  • 2g coriander or parsley
  • 1-2 g finely chopped garlic
  • pepper, chilli and chopped tomato to taste

Preparation of Guacamole Salsa

  1. Place the avocado pulp in a blender, add the lime or lemon juice and blend well. Then add all the other ingredients chopped very finely.
  2. Season with salt, pepper and chilli and, if you want, add a chopped tomato.
    Serve the guacamole salsa with nachos or use it to stuff tortillas together with tasty Chilli con carne.

Version with gluten of Guacamola Salsa

The recipe contains only naturally gluten-free ingredients, so no adaptation is necessary for its version with gluten.

For the ‘friends’ recipes‘ section, I am sharing with you a tasty recipe that Cecilia sent us: Papaya sauce with vegetables. It is a great idea to accompany tortillas, but also to top crackers and bread. In short, a perfect hunger-breaker or a tasty aperitif to propose to friends.

And don’t be misled by the fact that the main ingredient is a fruit: the sauce is savoury and perfect for stimulating your appetite! This sauce is also great to be served with cheese and, why not, with my beloved Pinzimonio.

Papaya sauce with vegetables

Ingredients

  • 550g papaya
  • 200g tomatoes
  • 15g spring onion
  • 3 tbsp fresh lime juice
  • 2g fresh cilantro
  • 1 teaspoon jalapeño chilli
  • salt

Preparation

  1. Peel the papaya, remove the seeds and blend it. Remove the seeds from the tomatoes and chop the pulp finely. Also finely chop the spring onion, cilantro and seeded chilli.

  1. Mix all ingredients together, add lime juice, adjust salt and serve the sauce to accompany tortillas or crackers.
