Well, with it also the dreaded heat has arrived! And to combat it, we recommend a simple, fresh and very tasty dish, a great classic to which we have added our personal touch:<strong> Octopus and chickpea salad with balsamic vinegar<\/strong>, a perfect mix of fish, vegetables, pulses and lightness.<\/p>\n<p>If you love salads, try this <a href=\"http:\/\/unochefpergaia.it\/insalata-di-legumotti-con-cipolla-di-tropea-caramellata\/\">Legumotti salad with caramelised Tropea onion<\/a>.<\/p>\n<p>Here&#8217;s what you need to prepare it!<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Octopus and chickpea salad with balsamic vinegar<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>6.71g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>1kg fresh octopus, gutted (500g cooked)<\/li>\n<li>230g cooked chickpeas (I used canned chickpeas*)<\/li>\n<li>200g ripe tomatoes<\/li>\n<li>1 celery stalk<\/li>\n<li>2 small carrots<\/li>\n<li>1 bunch of parsley<\/li>\n<li>1 onion<\/li>\n<li>1 clove garlic<\/li>\n<li>extra virgin olive oil, salt, Balsamic Vinegar of Modena, parsley<\/li>\n<\/ul>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Place the octopus in a slightly high-sided pan, add water so that it is more than half covered, then top with a celery stalk, carrots, parsley, onion and garlic; cover and simmer for 45 minutes.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-726 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/07\/Insalata-di-polpo-e-ceci-al-balsamico12.jpg\" alt=\"Insalata-di-polpo-e-ceci-al-balsamico-blog-uno-chef-per-gaia\" width=\"500\" height=\"332\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/07\/Insalata-di-polpo-e-ceci-al-balsamico12.jpg 500w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/07\/Insalata-di-polpo-e-ceci-al-balsamico12-272x182.jpg 272w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<ol start=\"2\">\n<li>Once it is ready, drain it and let it cool. Remove most of the skin, cut it into pieces and then add the chickpeas and chopped tomatoes.<\/li>\n<li>Season to taste with a pinch of salt, extra virgin olive oil and Balsamic Vinegar of Modena.
