For us freshly baked bread is truly irresistible, one of those treats that fills the house with goodness, warming it up and making it even cosier&#8230; especially when the first cold weather sets in.<\/p>\n<p>Then there is the satisfaction of enjoying a fragrant loaf of bread made with one&#8217;s own hands.<br \/>\nToday we are going to make gluten-free Rustic loaves that you can use to accompany meals, snacks and breakfasts; and if you don&#8217;t have time to let bread rise, try <a href=\"http:\/\/unochefpergaia.it\/focaccine-allo-yogurt\/\">Yoghurt flat bread<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Rustic loaves<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>45.73g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>780g water<\/li>\n<li>420g flour mix for bread, brand Revolution**<\/li>\n<li>300g flour mix for dark bread, brand Sch\u00e4r**<\/li>\n<li>120g buckwheat flour*<\/li>\n<li>100g flour mix for bread, brand Bene S\u00ec Coop**<\/li>\n<li>50g extra virgin olive oil<\/li>\n<li>20g sprouted buckwheat flour* (optional)<\/li>\n<li>25g brewer&#8217;s yeast<\/li>\n<li>10g salt<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>In a bowl, or in a planetary mixer, mix all the ingredients together, setting aside only 10g of oil.<\/li>\n<li>When the dough is even and fairly firm, divide it into 4 pieces and form into large loaves; place them on 2 baking tins covered with parchment paper and leave them to rise for about 2 hours.<\/li>\n<li>Brush the surface with the oil set aside; bake for 30-40 minutes in a static oven preheated to 200\u00b0C.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-853 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/10\/Filoni-di-pane-rustici-6.jpg\" alt=\"filoni-di-pane-rustici-senza-glutine-uno-chef-per-gaia\" width=\"500\" height=\"332\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/10\/Filoni-di-pane-rustici-6.jpg 500w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2016\/10\/Filoni-di-pane-rustici-6-272x182.jpg 272w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><span style=\"color: #800000;\"><strong>Version with gluten of Rustic loaves<\/strong><\/span><\/h3>\n<p>Replace the gluten-free flours with equal amounts of mixed wholemeal flours, reducing the water to 550g.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>How pleasant is the smell of freshly baked Rustic loaves?
