The <strong>Three-colour flan<\/strong> can be a winning idea as it contains some of children&#8217;s favourite vegetable ingredients, namely <strong>potatoes<\/strong>, <strong>pumpkin<\/strong> and <strong>carrots<\/strong>.<\/p>\n<p>Given the <strong>richness<\/strong> of potatoes and pumpkin in <strong>carbohydrates<\/strong>, as well as the presence of <strong>cheese<\/strong> and <strong>egg<\/strong>, the Three-colour flan can be eaten as a <strong>one-course meal<\/strong>, quenching even the most insatiable appetites.<\/p>\n<p>Furthermore, you can also use this wonderful dish as a side dish or, why not, a main course to propose during a dinner with friends with vegetarian preferences, perhaps combined with a <a href=\"http:\/\/unochefpergaia.it\/ricetta-ratatouille-di-verdure\/\">Ratatouille<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Three-colour flan<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>9.54g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>800g potatoes<\/li>\n<li>700g courgettes<\/li>\n<li>400g pumpkin<\/li>\n<li>300g carrots<\/li>\n<li>100g Parmigiano Reggiano cheese, grated<\/li>\n<li>25g butter<\/li>\n<li>10g breadcrumbs**<\/li>\n<li>1 egg<\/li>\n<li>to taste salt, pepper, oil<\/li>\n<\/ul>\n<p>**Ingredients specific for <a href=\"https:\/\/www.aicemiliaromagna.it\/celiachia\/?gclid=Cj0KCQiAvP6ABhCjARIsAH37rbReW1PMknck_-xcDi3Enfnv64VCGWavvUmzZTfa0QTazTCZp5VRq3gaAhoPEALw_wcB\">celiacs<\/a><\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Boil the potatoes and mash them in a potato masher, then season with a knob of butter, half of the Parmesan cheese and egg. Boil the carrots and mash them too. Steam the pumpkin and thinly sliced courgettes with a little oil and salt. Once the pumpkin is cooked, repeat the operation with a potato masher, add the carrots, a little Parmesan cheese, salt to taste, and complete the mixture with some mashed potatoes.<\/li>\n<li>Form a layer of courgettes on the bottom of an oven-proof dish and sprinkle with the remaining Parmesan cheese. Cover everything with the pumpkin mixture, press well and top with a layer of mashed potatoes.<\/li>\n<li>Dust the surface with a little breadcrumbs, put a few tufts of butter on top and bake au gratin in the oven at 200\u00b0C for about 20 minutes, until a nice crust has formed.
