Fragrant, crispy and crumbly: this is my gluten-free <strong>Sbrisolona<\/strong>, the cake that is best enjoyed down to the last crumb.<\/p>\n<p>Compared to more traditional Sbrisolona recipes, this <strong>gluten-free version contains less butter and fewer eggs<\/strong> to make it more diabetes-friendly without taking away the richness of its flavour and inimitable texture: remember to break it up with your hands so that the pieces are uneven and form crumbs&#8230; which everyone will try to grab!<\/p>\n<p>Preparing it is so simple that you will find yourself making it whenever you have guests and little time. And if you like crumbs, don&#8217;t miss the <a href=\"http:\/\/unochefpergaia.it\/crumble-di-avena-e-ricotta-senza-glutine\/\">Oat and ricotta crumble<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Gluten-free Sbrisolona<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>55.2g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>250g almonds (of which 150g with peel and 100g peeled)<\/li>\n<li>250g flour mix for bread, brand BiAglut**<\/li>\n<li>170g butter<\/li>\n<li>150g coarse corn flour*<\/li>\n<li>150g sugar<\/li>\n<li>50g wholemeal rice flour*<\/li>\n<li>2 eggs<\/li>\n<li>grated rind of 1 lemon<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten free\u201d (or, in Italy, present on on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Chop the almonds very coarsely, leaving some whole.<\/li>\n<li>Mix all ingredients in a bowl.<\/li>\n<li>Cover a round baking tin 30-32cm in diameter with parchment paper, pour the mixture onto it and spread it out with your hands in an even layer.
