{"id":9292,"date":"2018-04-04T11:49:41","date_gmt":"2018-04-04T11:49:41","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=9292"},"modified":"2023-04-07T17:50:01","modified_gmt":"2023-04-07T17:50:01","slug":"mahalabiya-budino-al-latte-al-profumo-di-rosa","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/mahalabiya-budino-al-latte-al-profumo-di-rosa\/","title":{"rendered":"Mahalabiya: rose-scented milk pudding"},"content":{"rendered":"<p><strong>Mahalabiya<\/strong> is a <strong>rose-scented milk pudding<\/strong> that I got to know and taste during an unforgettable family trip: a day and a half snatched from work to give the children their first encounter with the magical city of Venice.<\/p>\n<p>Undoubtedly, the enchantment of the place and the joy of spending a few hours of serenity with loved ones on a beautiful sunny day made the culinary experience even tastier. But lunch at the <strong>gluten free restaurant<\/strong> Cucina Mediterranea<a href=\"http:\/\/www.frarysvenezia.it\/\"><strong> Frary&#8217;s in Venice<\/strong><\/a> was a real surprise.<\/p>\n<p>The unexpected ingredient in the preparation is rosewater, which we do not normally use in traditional cooking, so much so that the olfactory experience of this pudding is very strong: one has the impression of having a perfume to wear on the table rather than a dish to taste! This is because we are used to finding rosewater in cosmetics, but actually in the Italian culinary tradition we have many recipes in which <a href=\"https:\/\/www.lacucinaitaliana.it\/news\/trend\/la-rinascita-dellacqua-di-fiori-di-arancio-amaro\/?refresh_ce=\"><strong>orange blossom water<\/strong><\/a>is used, such as the very famous Neapolitan &#8216;Pastiera&#8217;.<\/p>\n<p>As soon as I got back, I immediately wanted to try to reproduce this typical North African dessert and, thanks to the help of a Tunisian friend, I created my own version of <strong>rose-scented milk pudding<\/strong>, my <strong>Mahalabiya, <\/strong>which my fellow travellers promoted with flying colours!<\/p>\n<p>If you want to enjoy a lactose-free pudding with no added sugar instead, try my <a href=\"http:\/\/unochefpergaia.it\/budino-di-pesche-al-cocco-e-menta-senza-zuccheri-aggiunti\/\">Peach pudding with coconut and mint with no added sugar<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Mahalabiya, rose-scented milk pudding<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>31.13g carbohydrates per 100g of pudding without decorations<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>400g milk<\/li>\n<li>100g sugar<\/li>\n<li>60g wholemeal rice flour*<\/li>\n<li>6g rosewater*<\/li>\n<li>grated coconut*, cinnamon powder*, slivered almonds*, raisins, pistachios<\/li>\n<\/ul>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation\u00a0<\/strong><\/span><\/h2>\n<ol>\n<li>Pour the milk into a saucepan and gradually add the sugar and rice flour, stirring with a whisk so that no lumps form. Finally, add the rose water and put the pan on the heat.<\/li>\n<li>While continuing to stir, bring the cream to the boil. When it starts to thicken, remove it from the heat and pour it immediately into small single-portion glasses.<\/li>\n<li>Let cool and place in the refrigerator.<\/li>\n<li>When serving, sprinkle the surface with a pinch of grated coconut, a little cinnamon, a few almond slivers, a pinch of chopped pistachios and some raisins.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1376\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2018\/04\/Mahalabiya-4.jpg\" alt=\"Mahalabiya-dolce-senza-glutine-uno-chef-per-gaia\" width=\"500\" height=\"332\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2018\/04\/Mahalabiya-4.jpg 500w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2018\/04\/Mahalabiya-4-272x182.jpg 272w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><span style=\"color: #800000;\"><strong>Version with gluten of Mahalabiya, rose-scented milk pudding<\/strong><\/span><\/h3>\n<p>The recipe contains <strong>only naturally gluten-free ingredients<\/strong>, so no adaptation is necessary for its version with gluten.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mahalabiya is a rose-scented milk pudding that I got to know and taste during an unforgettable family trip: a day and a half snatched from work to give the children their first encounter with the magical city of Venice.
