{"id":9290,"date":"2018-04-26T12:19:08","date_gmt":"2018-04-26T12:19:08","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=9290"},"modified":"2023-04-07T17:38:03","modified_gmt":"2023-04-07T17:38:03","slug":"panini-alle-olive-senza-glutine","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/panini-alle-olive-senza-glutine\/","title":{"rendered":"Gluten-free olive buns"},"content":{"rendered":"<p><strong>Bread<\/strong> represents the greatest challenge in the world of gluten free and the pleasure of variety of shapes and flavours is central to the experience. <strong>Olive buns<\/strong> are a moment of joy for us because they are one of my son Nicol\u00f2&#8217;s favourite breads and he loves them so much!<\/p>\n<p>Olive buns are also perfect as a school snack or garden party, but they add a touch of flavour and colour to the bread basket that I love to put on the table whenever possible with as much variety as possible: <a href=\"http:\/\/unochefpergaia.it\/fantasia-di-pane-bianco\/\">white bread<\/a>, dark bread <a href=\"http:\/\/unochefpergaia.it\/pane-nero-ai-semi-di-lino\/\">seed bread<\/a>, <a href=\"http:\/\/unochefpergaia.it\/pao-de-queijo-senza-glutine\/\">cheese bread<\/a> and so on and so forth!<\/p>\n<p>So, let&#8217;s knead!<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Olive buns<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>43.5g carbohydrates per 100 g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients<\/strong><\/span><\/h2>\n<ul>\n<li>370g water<\/li>\n<li>250g pitted green and black olives<\/li>\n<li>220g flour mix for bread, brand Sch\u00e4r B**<\/li>\n<li>150g gluten-free flour, brand Revolution**<\/li>\n<li>150g flour mix for bread, brand Pedon Easyglut**<\/li>\n<li>20g extra virgin olive oil<\/li>\n<li>12g brewer&#8217;s yeast<\/li>\n<li>5g salt<\/li>\n<li>extra virgin olive oil to brush the surface<\/li>\n<li>rice flour* for dusting<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Place water and crumbled yeast in a bowl or food processor and stir for a few seconds to dissolve the yeast. Add all the flours, salt and oil, then knead until you have a homogeneous and firm mixture that can be rolled out with a rolling pin.<\/li>\n<li>Divide the mixture in half and roll out each half with the help of a little rice flour to form a rectangle about 40cm long and 25-30cm wide.<\/li>\n<li>Place the sliced green and black olives, slightly offset from the centre of the rectangle lengthwise. Cover the olives with the dough to form a roll.<\/li>\n<li>Cut the roll into pieces of about 10cm. Place them on a sheet of parchment paper, leaving them far enough apart to allow them to rise. Brush the surface with olive oil and leave to rise for at least 1 hour.
