{"id":9130,"date":"2020-11-15T07:41:04","date_gmt":"2020-11-15T07:41:04","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=9130"},"modified":"2023-04-07T09:20:25","modified_gmt":"2023-04-07T09:20:25","slug":"zuppa-di-cipolle-gratinata","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/zuppa-di-cipolle-gratinata\/","title":{"rendered":"Onion soup au gratin"},"content":{"rendered":"<p>Here in the Po Valley, the fog has been with us for a few days and do you know what dish I love on these days? <strong>Onion soup au gratin<\/strong>.<\/p>\n<p>Hot, fragrant, with melted Pecorino cheese and crispy on the surface, the whole family loves it and it is perfect as a <strong>one-course meal<\/strong>.<\/p>\n<p>For the onion soup au gratin, you will only need <strong>very few ingredients<\/strong>, a diving mask (I&#8217;m joking of course, but it&#8217;s the only tool to keep you from crying while slicing the large amount of onions you need!) and a cooking time of 40 minutes, which you will have to plan. After that, enjoy this fantastic dish!<\/p>\n<p>I forgot, you can also follow the recipe step by step in the video that kept us company in the spring lockdown: <a href=\"https:\/\/www.youtube.com\/watch?v=w7Mdn_9hWyc\">enjoy the video<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Onion soup au gratin\u00a0 \u00a0 <\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>11.88g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><strong>\u00a0<span style=\"color: #800000;\">Ingredients <\/span><\/strong><\/h2>\n<ul>\n<li>1kg white onions<\/li>\n<li>1lt vegetable or meat stock<\/li>\n<li>200g fresh Pecorino cheese<\/li>\n<li>4 <a href=\"http:\/\/unochefpergaia.it\/pane-nero-ai-semi-di-lino\/\">slices of bread<\/a>** (in my case 160g, i.e. 40g per slice)<\/li>\n<li>50g matured Pecorino cheese<\/li>\n<li>30g extra virgin olive oil<\/li>\n<li>20g brown rice flour*<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Peel the onions and cut them into very thin slices, perhaps with the help of a mandoline. Heat the oil in a crock pot, add the onions, salt and let them stew slowly with the lid on for 20 minutes, stirring occasionally.<\/li>\n<li>Sprinkle the onions with the sifted flour, stir well so that no lumps form, pour in the boiling stock, cover the pan again and cook for another 40 minutes.<\/li>\n<li>Divide the soup among 4 ovenproof single-portion bowls, cover them with a slice of toasted bread with a slice of fresh Pecorino cheese and put the bowls under the oven grill until the cheese has melted.
