And that is how I came up with the idea of preparing a dish that combines land and sea, a dish where squid meets &#8216;nduja, the undisputed queen of the tip of our boot: <strong>Calamari in fish soup with &#8216;nduja<\/strong>.<\/p>\n<p>Calabria is definitely the region where red is the colour that paints the table, and it does so with chilli, the star ingredient of the \u2018<a href=\"https:\/\/it.wikipedia.org\/wiki\/%27Nduja\">nduja<\/a>, the sausage prepared by mixing pork meat and other spices, but also of the <a href=\"https:\/\/it.wikipedia.org\/wiki\/Sardella\">Sardella<\/a>, a spicy cream made from whitebait, as well as many other specialities, and textiles and local handicrafts.<\/p>\n<p>So let&#8217;s paint our tables red and add a little spice to life!<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Calamari in fish soup with &#8216;nduja<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"text-decoration: underline; color: #800000;\"><strong>negligible carbohydrates per 100g without bread<\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for 4 servings<\/strong><\/span><\/h2>\n<ul>\n<li>1kg squid, cleaned<\/li>\n<li>100g white wine<\/li>\n<li>30g slivered almonds*<\/li>\n<li>20g &#8216;nduja*<\/li>\n<li>1 sprig of parsley<\/li>\n<li>2 small sprigs of marjoram<\/li>\n<li>1 clove of garlic<\/li>\n<li>1\/2 lemon with edible peel<\/li>\n<li>extra virgin olive oil<\/li>\n<li>salt<\/li>\n<li>homemade bread**<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Cut the cleaned squid with beaks and eyes removed into strips and saut\u00e9 them in a frying pan with a little extra virgin olive oil and the chopped clove of garlic.
