So here is my pairing because its intense and complex bouquet of aromatic herbs goes perfectly with the sweet scent of peppers, enlivened by the savouriness of anchovies and slivers of <strong>36-month Parmigiano Reggiano cheese<\/strong> that masterfully reflect the mineral note that the wine draws from the volcanic soils where the vines grow.<\/p>\n<p>The recipe is rich in fibre thanks to the peppers and lentils, it is also an excellent source of vitamins, the anchovies provide us with Omega 3, and the 36-month Parmesan cheese not only allows us to get calcium, but also makes the recipe suitable for those who are intolerant to dairy proteins: in short, a \u201c<strong>supplement recipe<\/strong>\u201d\u00a0 as my friend <strong>Alessandra Bosetti<\/strong>, clinical dietician at the Buzzi Hospital in Milan, would call it, just like the <a href=\"https:\/\/unochefpergaia.it\/torrette-di-riso-venere-con-crema-di-mandorle-e-pomodori\/\">Venere rice towers with almond cream and tomatoes<\/a>.<\/p>\n<p>When staying in the city while others are on holiday, the best way to treat oneself to a few moments of pleasure and relaxation is to indulge in good food and a glass of wine of those that remain in the memory file like photos taken in summer.<\/p>\n<p><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E4136.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-6136 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E4136.jpg\" alt=\"Omina romana\" width=\"400\" height=\"636\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E4136.jpg 400w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E4136-126x200.jpg 126w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E0596.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-6138 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E0596.jpg\" alt=\"Viognier\" width=\"400\" height=\"533\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E0596.jpg 400w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2022\/07\/IMG_E0596-150x200.jpg 150w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Cream of peppers and lentils with anchovy croutons<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>12.74g carbohydrates per 100g of Cream of peppers and lentils without croutons<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for 4 servings<\/strong><\/span><\/h2>\n<ul>\n<li>1kg bell peppers (2 red and 2 yellow)<\/li>\n<li>100g hulled lentils<\/li>\n<li>2 slices of gluten-free wholemeal bread**<\/li>\n<li>30g Parmigiano Reggiano 36 months old<\/li>\n<li>4 anchovy fillets in oil<\/li>\n<li>extra virgin olive oil<\/li>\n<li>chili<\/li>\n<li>salt and pepper<\/li>\n<li>edible flowers for decoration<\/li>\n<\/ul>\n<p>** Ingredients specific for celiacs<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation of Cream of peppers and lentils<\/strong><\/span><\/h2>\n<ol>\n<li>Clean the peppers, cut them in half, remove the stalk, seeds and white filaments, then cut them into quarters and place in the oven under the grill at 200\u00b0C until the skin is slightly dark. Seal the peppers in a paper bag and, when cold, peel and set them aside.<\/li>\n<li>Boil the lentils in lightly salted water until cooked: with hulled lentils it will take about 15 minutes.
