So, here is a one-course meal ready in <strong>30 minutes<\/strong>, unless the cooking time for your rice takes longer.<\/p>\n<p>Furthermore, if you like this summer recipe idea, use your creativity to invent many other rice salads layering them in a glass to make your table unique and fun for your table companions.\u00a0 Have a look at these <a href=\"https:\/\/unochefpergaia.it\/torrette-di-riso-venere-con-crema-di-mandorle-e-pomodori\/\">Venere rice towers <\/a>\u00a0to find inspiration!<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Summer recipe: Venere rice salad in a glass<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>9.5g carbohydrates per 100g<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for the courgettes cream<\/strong><\/span><\/h2>\n<ul>\n<li>300g courgettes<\/li>\n<li>170g water or vegetable stock*<\/li>\n<li>100g leek<\/li>\n<li>20g extra virgin olive oil<\/li>\n<li>a bunch of basil<\/li>\n<li>some mint leaves<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for the mozzarella mousse<\/strong><\/span><\/h2>\n<ul>\n<li>400g cow\u2019s milk mozzarella<\/li>\n<li>20g extra virgin olive oil<\/li>\n<li>water<\/li>\n<\/ul>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for assembling 4 glasses<\/strong><\/span><\/h2>\n<ul>\n<li>200g cherry tomatoes<\/li>\n<li>100g Venere rice<\/li>\n<li>basil leaves<\/li>\n<li>extra virgin olive oil<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Cook the Venere rice in lightly salted water and drain it when it has the perfect texture to be eaten, then lay it out to cool quite quickly.<\/li>\n<li>In the meantime, chop the leek and sweat it in a pan with the extra virgin olive oil, add the chopped courgettes, allow them to gain flavour for a minute, then add the water, basil and mint and cook for 12-13 minutes.<\/li>\n<li>Pour everything in a blender, blend to a smooth cream and season with salt and pepper. Put aside.<\/li>\n<li>Place the chopped mozzarella in a large, tall glass, add 4-5 tablespoons of water and start blending with an immersion blender (ideal for the texture is to use a <a href=\"https:\/\/www.bamix.com\/shop\/eu_it\/\">Bamix<\/a>) while also pouring in the extra virgin olive oil in a trickle. If the mozzarella cream is too hard, add a few more tablespoons of water while continuing to blend until it is soft and creamy like a mousse.
