{"id":8928,"date":"2021-04-25T05:49:50","date_gmt":"2021-04-25T05:49:50","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=8928"},"modified":"2023-04-05T20:51:50","modified_gmt":"2023-04-05T20:51:50","slug":"mini-grissini-al-saraceno-senza-glutine","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/mini-grissini-al-saraceno-senza-glutine\/","title":{"rendered":"Mini buckwheat breadsticks"},"content":{"rendered":"<p>Are you short of time, but fancy something tasty and versatile? <strong>Mini buckwheat breadsticks<\/strong> will be a delightful surprise. <a href=\"https:\/\/www.youtube.com\/watch?v=FIhIh3QNub8\">Watch how to prepare them on my YouTube channel<\/a>!<\/p>\n<p>Very few ingredients, quick and easy to prepare, you can use them as an aperitif or to make the bread basket even richer, perhaps by combining them with some <a href=\"http:\/\/unochefpergaia.it\/focaccia-gluten-free-al-grano-saraceno-e-mais\/\">Buckwheat and corn focaccia<\/a>.<\/p>\n<p>The base is a bris\u00e8 crust whose flavour is enriched by <strong>blended sesame seeds<\/strong> that allow us to reduce the amount of salt contained, but let&#8217;s not forget that these are <strong>buckwheat mini breadsticks<\/strong> that contain butter, so let&#8217;s not eat too many&#8230; as they are irresistible!<\/p>\n<p>Finally, sesame seeds are rich in calcium, as well as containing Omega 3 and Omega 6, so they are good supplements for lactose intolerant people and to prevent osteoporosis.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Mini buckwheat breadsticks\u00a0\u00a0\u00a0 <\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>carbohydrates 49.7g per 100g <\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients <\/strong><\/span><\/h2>\n<ul>\n<li>130 g gluten free bread flour mix, brand Nutrifree**<\/li>\n<li>60g buckwheat flour*<\/li>\n<li>80g butter<\/li>\n<li>40g water<\/li>\n<li>1 egg white<\/li>\n<li>20g sesame seeds<\/li>\n<li>1 pinch of salt<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation of Mini buckwheat breadsticks<\/strong><\/span><\/h2>\n<ol>\n<li>Put the sesame seeds in a blender and blend to a flour.<\/li>\n<li>In a bowl, mix all the ingredients: the sesame flour, bread flour and buckwheat flour, a pinch of salt, the cold butter in small pieces, the egg white and the water and stir to obtain an even mixture.<\/li>\n<li>Form a ball with the dough, wrap it in cling film and place it in the refrigerator for 1 hour.<\/li>\n<li>Take pieces of dough and form them into cylinders 1cm in diameter, cut them into pieces 3-4cm long and lay them on a baking tin lined with parchment paper.<\/li>\n<li>Bake the breadsticks in a static oven preheated to 180\u00b0C for about 20 minutes.<\/li>\n<\/ol>\n<div id=\"attachment_5125\" style=\"width: 642px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2021\/04\/Mini-grissini-al-saraceno-18-632x474.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5125\" class=\"wp-image-5125 size-medium\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2021\/04\/Mini-grissini-al-saraceno-18-632x474.jpg\" alt=\"I mini grissini al saraceno pronti per essere gustati come stuzzichino\" width=\"632\" height=\"474\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2021\/04\/Mini-grissini-al-saraceno-18-632x474.jpg 632w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2021\/04\/Mini-grissini-al-saraceno-18-267x200.jpg 267w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2021\/04\/Mini-grissini-al-saraceno-18.jpg 700w\" sizes=\"auto, (max-width: 632px) 100vw, 632px\" \/><\/a><p id=\"caption-attachment-5125\" class=\"wp-caption-text\">The mini buckwheat breadsticks ready to be enjoyed as appetisers<\/p><\/div>\n<h3><span style=\"color: #800000;\"><strong>Version with gluten of Mini buckwheat breadsticks<\/strong><\/span><\/h3>\n<p>Replace the gluten free flour with 150 g bread flour and reduce the amount of water if the dough is too soft.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Are you short of time, but fancy something tasty and versatile?
