The presence of a very simple filling of onions and anchovies also enriches the nutritional profile of the recipe: additional fibre from the onions and all the goodness of Omega 3 from the anchovies.<\/p>\n<p>Since I had them available, I decided to try using <strong>Giarratane onions<\/strong>, the sweet, extra large Sicilian onions that are perfect when combined with tasty anchovies, for a truly mouth-watering result.<\/p>\n<p>If you feel like turning on the oven and making Focaccia, try the <a href=\"https:\/\/unochefpergaia.it\/focaccia-gluten-free-al-grano-saraceno-e-mais\/\">Buckwheat and Corn Focaccia<\/a>.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Onion and anchovy flat bread<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>carbohydrates 38.82g per 100g<\/u><\/strong><\/span><\/h1>\n<p><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-632x474.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-12470 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-632x474.jpg\" alt=\"schiaccia-di-cipolle-e-alici\" width=\"632\" height=\"474\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-632x474.jpg 632w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-800x600.jpg 800w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-267x200.jpg 267w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-768x576.jpg 768w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9-705x529.jpg 705w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/08\/Schiaccia-di-cipolle-e-alici-9.jpg 1200w\" sizes=\"auto, (max-width: 632px) 100vw, 632px\" \/><\/a><\/p>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for a flat bread of 28cm diameter<\/strong><\/span><\/h2>\n<ul>\n<li>400g gluten free bread flour mix, brand Nutrifree** (for the version with gluten, see below)<\/li>\n<li>400g water<\/li>\n<li>400g onions<\/li>\n<li>60g brown rice flour*<\/li>\n<li>20 g inulin*<\/li>\n<li>20g buckwheat flour*<\/li>\n<li>10-12 anchovies in oil<\/li>\n<li>8g brewer\u2019s yeast<\/li>\n<li>8g salt<\/li>\n<li>extra virgin olive oil<\/li>\n<li>dried oregano<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on\u00a0<a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><strong><span style=\"color: #800000;\">Preparation<\/span><\/strong><\/h2>\n<ol>\n<li>Dissolve the brewer&#8217;s yeast in the water.<\/li>\n<li>Place the flours and inulin in the bowl of a planetary mixer, start mixing and add the water with the yeast in a trickle; mix for 5 minutes at medium speed, then add the salt and 3 tablespoons of extra virgin olive oil, mixing for another 3-4 minutes.<\/li>\n<li>Form a ball with the dough, place it in a bowl and lightly grease the surface with extra virgin olive oil; cover with cling film and leave to rise until doubled in volume (approx. 2 hours).<\/li>\n<li>Meanwhile, slice the onions and slowly fry them in a non-stick pan with a little oil.
