Cook over low heat for about 45 minutes.<\/li>\n<li>Prepare the couscous according to the instructions on the packet, i.e. by soaking it with an equal amount of hot water.<\/li>\n<li>Julienne cut the courgettes and saut\u00e9 them for a few minutes in a non-stick pan with a little oil. Season with salt and pepper.<\/li>\n<li>Separate the couscous well with a fork and season it by adding the courgettes, chopped mint and parsley, grated lemon zest, salt and pepper and a drizzle of extra virgin olive oil.<\/li>\n<li>Assemble the plates by placing the couscous on the bottom and the chopped octopus and avocado on top.
