{"id":12307,"date":"2024-06-19T12:46:22","date_gmt":"2024-06-19T12:46:22","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=12307"},"modified":"2024-06-19T12:46:33","modified_gmt":"2024-06-19T12:46:33","slug":"snow-peas-asparagus-and-fruit-june-salads","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/snow-peas-asparagus-and-fruit-june-salads\/","title":{"rendered":"Snow peas, asparagus and fruit: June salads"},"content":{"rendered":"<p>As summer officially begins on 21st June, <strong>June salads<\/strong> will delight us with the addition of seasonal fruit.<\/p>\n<p><strong>Asparagus <\/strong>continues to be present, which we can enjoy with a mouth-watering cheese cream and plums for a salad that also becomes a green all-in-one dish, great to take to <strong>the office<\/strong> or <strong>to the pool<\/strong> in a convenient lunch box.<\/p>\n<p>My salad with cooked vegetables features <strong>snow peas<\/strong> accompanied by carrots, but above all by the contrast of the sweetness of the figs and the saltiness of the crispy <a href=\"https:\/\/www.prosciuttodiparma.com\/\">Prosciutto di Parma<\/a>: as an appetiser, main course or as a one-course meal, the Salad of snow peas and figs will win you over with its explosion of flavours.<\/p>\n<p>The tip I want to share with June salads is the use of <strong>spray oil<\/strong>, a very interesting way to dress our dishes. Why?<\/p>\n<p>For two main reasons: the first is that we will use up to <strong>90 per cent<\/strong> less oil for dressing, thus significantly reducing the calorie intake of the salads themselves; the second is that in the canned bag of <a href=\"https:\/\/sprayleggero.it\/it\/?gad_source=1&amp;gclid=CjwKCAjwmrqzBhAoEiwAXVpgolWW9TqqN8JM2mXdEFTWDF9zkS772bvA9x7Wm1m-w9nRKYacEkcyRBoC04wQAvD_BwE\">Fratelli Mantova<\/a> the oil is stored in the dark and protected from the air, thus guaranteeing <strong>ideal preservation<\/strong>.<\/p>\n<p>My choice for these salads is <a href=\"https:\/\/sprayleggero.it\/it\/12-i-nutraceutici\">avocado oil<\/a> containing 100% oil extracted from the pulp of the avocado fruit, rich in vitamin E, with a light and delicate taste and texture.<\/p>\n<p>For more ideas, see also the <a Robiola cheese<\/li>\n<li>shelled pistachios<\/li>\n<li>1 lemon with edible zest<\/li>\n<li><a href=\"https:\/\/sprayleggero.it\/it\/12-i-nutraceutici\">Fratelli Mantova\u2019s avocado oil<\/a><\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>*Ingredients whose labels must read \u201cgluten free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><strong><span style=\"color: #800000;\">Preparation<\/span><\/strong><\/h2>\n<ol>\n<li>With a mandoline, slice the asparagus into ribbons and marinate them for at least 15 minutes with a teaspoon of lemon juice, salt, pepper and a splash of avocado oil.<\/li>\n<li>Prepare a cream by mixing ricotta, robiola, grated lemon peel and a grinding of pepper.<\/li>\n<li>Assemble the salad by placing the asparagus ribbons in a salad bowl, the cheese cream, the plums cut into wedges and a sprinkling of shelled pistachios.<\/li>\n<\/ol>\n<p><a juice<\/li>\n<li><a href=\"https:\/\/sprayleggero.it\/it\/12-i-nutraceutici\">Fratelli Mantova\u2019s avocado oil<\/a><\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<h2><strong><span style=\"color: #800000;\">Preparation<\/span><\/strong><\/h2>\n<ol>\n<li>Slice the carrots into ribbons using a mandoline, season them with lemon juice, salt, pepper and a splash of avocado oil, then allow to rest for the time needed to prepare the other ingredients.<\/li>\n<li>Boil the snow peas in boiling salted water until cooked but still firm.
