{"id":12119,"date":"2024-04-18T16:31:46","date_gmt":"2024-04-18T16:31:46","guid":{"rendered":"https:\/\/unochefpergaia.it\/?p=12119"},"modified":"2024-04-18T16:31:29","modified_gmt":"2024-04-18T16:31:29","slug":"one-course-meals-vegetarian-mussakas","status":"publish","type":"post","link":"https:\/\/unochefpergaia.it\/en\/one-course-meals-vegetarian-mussakas\/","title":{"rendered":"One-course meals: Vegetarian Mussak\u00e0s"},"content":{"rendered":"<p>If you have been to Greece, you cannot have missed the <a href=\"https:\/\/unochefpergaia.it\/ricetta-mussakas-di-melanzane-gluten-free\/\">Classic Mussak\u00e0s<\/a> made with eggplants and meat sauce, a one-course meal rich dish that I thought I would revisit to create a lighter, vegetarian version: here is my <strong><br \/>\nVegetarian Mussak\u00e0s<\/strong>.<\/p>\n<p>This Vegetarian Mussak\u00e0s is the perfect substitute for Lasagna for the warmer months when <strong>light recipes rich in seasonal vegetables <\/strong>are preferred, but it is also loved by everyone in the family, including the little ones. It is also very useful for those who have to organise family meals, as it can be <strong>prepared in advance<\/strong> and then cooked with 30 minutes to spare.<\/p>\n<p>If you don&#8217;t like <strong>peppers<\/strong> or find them indigestible, replace them with <strong>courgettes<\/strong>!<\/p>\n<p>Remember that you can <strong>also<\/strong> prepare this recipe <strong>lactose-free<\/strong> by replacing the milk in the b\u00e9chamel with vegetable stock: all other ingredients are lactose-free!<\/p>\n<p>When you have eggplants in season, this recipe will be a dinner-saving one-course meal for every family need: enjoy!<\/p>\n<p><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-632x540.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-12090 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-632x540.jpg\" alt=\"mussakas-vegetariano\" width=\"632\" height=\"540\" srcset=\"https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-632x540.jpg 632w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-800x684.jpg 800w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-234x200.jpg 234w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-768x657.jpg 768w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23-705x603.jpg 705w, https:\/\/unochefpergaia.it\/wp-content\/uploads\/2024\/04\/Moussakas-vegetariano-particolare-23.jpg 1200w\" sizes=\"auto, (max-width: 632px) 100vw, 632px\" \/><\/a><\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Vegetarian Mussak\u00e0s<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>9.26g carbohydrates per 100g<\/strong><\/span><\/h1>\n<h2><strong><span style=\"color: #800000;\">Ingredients for 6 servings<\/span><\/strong><\/h2>\n<ul>\n<li>1kg eggplants<\/li>\n<li>450g potatoes<\/li>\n<li>300g red pepper (or courgettes)<\/li>\n<li>200g tomato sauce<\/li>\n<li>150g carrots<\/li>\n<li>120g onions<\/li>\n<li>Parmigiano Reggiano cheese, grated<\/li>\n<li>breadcrumbs*<\/li>\n<li>2 cloves of garlic<\/li>\n<li>extra virgin olive oil<\/li>\n<li>basil<\/li>\n<li>sage<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for the b\u00e9chamel sauce<\/strong><\/span><\/h2>\n<ul>\n<li>350g milk<\/li>\n<li>35g brown rice flour*<\/li>\n<li>35g grated Parmesan cheese<\/li>\n<li>30g extra virgin olive oil<\/li>\n<li>salt<\/li>\n<\/ul>\n<p>*Ingredients whose labels must read \u201cgluten free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><strong><span style=\"color: #800000;\">Preparation<\/span><\/strong><\/h2>\n<ol>\n<li>Slice the eggplants and place them on a baking tin lined with parchment paper,\u00a0 bake in a convection oven preheated to 180\u00b0C for about 20 minutes.<\/li>\n<li>Boil the potatoes with their skins on until they are soft enough to be sliced.<\/li>\n<li>Prepare the vegetable ragout browning the garlic in a little oil, then add the diced carrots and peppers; season with chopped basil and sage, add the tomato sauce, season with salt and pepper and cook for 15 minutes.<\/li>\n<li>Prepare a b\u00e9chamel sauce by mixing the rice flour with the oil, then gradually add the milk so that no lumps form and heat until the mixture starts to thicken. Remove from the heat, add the Parmesan cheese, mix well and add salt to taste.<\/li>\n<li>Take a rectangular oven dish, form a layer of vegetable ragout, cover it with the wilted eggplants, the sliced potatoes, a sprinkling of Parmesan cheese and start the layers again: you should have two layers of aubergines and ragout and only one layer of potatoes.
