And do you know how my Little truffles with surprise were born? By pure chance with ingredients found in the fridge after my online cooking course on <a href=\"https:\/\/unochefpergaia.it\/crostate-fantastiche\/\">Fantastic Tarts<\/a>. I recommend not underestimating the surprise effect by putting whatever you like in the centre of the soft <strong>mascarpone cream<\/strong>: in addition to my suggestions, give free rein to your imagination to make each bite unique.<\/p>\n<p>Another added value of Little truffles with surprise is that you can prepare the dough even a week in advance by storing it in the freezer! Simply take it out of the freezer a few hours before completing the preparation&#8230; in short, a dessert for busy mums.<\/p>\n<p>And if you want to know what my <strong>Easter lunch menu<\/strong> is going to be, here it is: <a href=\"https:\/\/unochefpergaia.it\/golosita-salate-quiche-di-tonno-e-peperoni\/\">Tuna and pepper quiche<\/a>, <a href=\"https:\/\/unochefpergaia.it\/insalata-di-pollo-marinato-alle-erbe\/\">Herb-marinated chicken salad<\/a> and Little truffles with surprise.<\/p>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong>Little truffles with surprise<\/strong><\/span><\/h1>\n<h1 style=\"text-align: center;\"><span style=\"color: #800000;\"><strong><u>33.15g carbohydrates per 100g of truffles without filling<\/u><\/strong><\/span><\/h1>\n<h2><span style=\"color: #800000;\"><strong>Ingredients for about 20 little truffles<\/strong><\/span><\/h2>\n<ul>\n<li>250g Mascarpone<\/li>\n<li>180g shortbread biscuits**<\/li>\n<li>45g icing sugar*<\/li>\n<li>30g espresso coffee<\/li>\n<li>filling to taste: jam*, berries, chocolate cream*, hazelnut cream*, almonds, hazelnuts, dried fruit<\/li>\n<li>bitter cocoa powder*<\/li>\n<\/ul>\n<p>**Ingredients specific for celiacs<\/p>\n<p>*Ingredients whose labels must read \u201cgluten-free\u201d (or, in Italy, present on <a href=\"https:\/\/www.celiachia.it\/dieta-senza-glutine\/il-prontuario-degli-alimenti\/il-prontuario\/\">\u00a0Prontuario AIC<\/a>)<\/p>\n<h2><span style=\"color: #800000;\"><strong>Preparation<\/strong><\/span><\/h2>\n<ol>\n<li>Blend the shortbread biscuits in a mixer, then mix them with Mascarpone, icing sugar and espresso coffee to obtain a homogeneous mixture. Place the mixture in the freezer to harden and make it workable.<\/li>\n<li>When the mixture is firm, weigh out 25g spoonfuls, flatten them on the palm of one hand and place the filling of your choice in the centre, closing to form a ball.<\/li>\n<li>Place the cocoa powder in a soup dish or small bowl and roll the truffles in it so that they are well coated with cocoa.<\/li>\n<li>Place the truffles in paper cups and keep them in the fridge, taking care to remove them about 30 minutes before serving.<\/li>\n<\/ol>\n<p>N.B.: to use them for a picnic, keep them in the freezer until the last moment, then store them in a cooler until ready to eat.<\/p>\n<h3><strong><span style=\"color: #800000;\"><a href=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2023\/03\/Tartufini-close-up.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-6998 aligncenter\" src=\"http:\/\/unochefpergaia.it\/wp-content\/uploads\/2023\/03\/Tartufini-close-up-632x445.jpg\" alt=\"Tartufini-close-up\" width=\"632\" height=\"445\" \/><\/a><\/span><\/strong><\/h3>\n<h3><strong><span style=\"color: #800000;\">Version with gluten of Little truffles with surprise<\/span><\/strong><\/h3>\n<p>Replace gluten-free <strong>shortbread biscuits<\/strong> with conventional biscuits; all other ingredients are <strong>naturally gluten-free<\/strong>, so no adaptations are necessary.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The best part of an Easter egg is definitely opening it to find out what surprise it contains, so I didn&#8217;t want to miss out on this pleasure by proposing a mouth-watering dessert that is perfect for a picnic on the first days of spring: my Little truffles with surprise.
